Hi Melinda, you may try mixing the dough/batter with the syrup a bit longer when making the nian gao.

I used an instant pot to steam. Any idea whether I should cut the cooking time or add another splash of water, or something else, for my next go around? Thanks!

If you have a kitchen scale, you can use the metric measurements in the recipe, so 400 grams of the sticks

Hi Olivia, you can freeze these sweet rice cakes, so you can make them far in advance.

My chinese indonesian friends eat these too. but their cooking process seems longer, they steam it around 4-6 hours and sundry it..i wonder if it made the taste significantly different. because i like theirs but have been put off making it due to the long process. this one seems way more do-able

Do you have a suggestion on how to calculate the 2 cups of sugar if I use brown rock sugar sticks?
